Our friends over at the Beckham Hotel in Mineola are keeping us refreshed this summer with a few drinks you’re gonna want to check out! Owner Chris Butler took some time to show us how to make their signature Peacock Martini, along with the newly named Lemon Ice Box Martini, which you can also enjoy anytime you stop by the Ironhorse Bar at the Beckham this summer.

How to make the Peacock Martini:
Ingredients
- Ice
- Empress 1908 Gin
- Topo Chico
- Half a Lemon
Directions
- Fill glass with ice
- Add 1.5oz of Empress 1908 Gin
- Add 3-4oz of Topo Chico
- Squeeze half a lemon into the drink
- Shake
- Strain into your preferred glass
How to make the Lemon Ice Box Martini:
Ingredients
- Ice
- Deep Eddy’s Lemon Vodka
- Pinnacle Whipped Vodka
- San Pellegrino Lemonade
Directions
- Fill glass with ice
- Add 1.5oz of Deep Eddy’s Lemon Vodka
- Add 1.5oz of Pinnacle Whipped Vodka
- Add 3-6oz of San Pellegrino Lemonade
- Shake
- Strain into your preferred glass
- Enjoy your drinks!
