The East Texas Weekend Preview — In 1897, a special hot link sausage recipe entered the region of East Texas from the Hasselback family.

For generations, this specific flavor would influence hot link stands in Camp County, becoming a beloved dish by locals.

Fast forward to the 1980’s where Gene Warrick, later to be known as the Hot Link King, and his wife, Madeline, would established the East Texas famous, Pittsburg Hot Links.

Today, you can still visit the original James/Potter building where they are serving up these tiny sausages the same way they did decades ago.

Known as “East Texas Caviar,” Pittsburg Hot Links are full of rich flavor. Each piece of sausage is neatly connected together as a link. Order a just a few or a whole rope of these delicious little bites.

We absolutely loved getting to experience this iconic East Texas delicacy for ourselves! While we highly recommend you give these sausages a try, Pittsburg Hot Links is also home to a wide variety of other great meal options, like their hearty burgers and BBQ plates.
